Anaerobic Fermentation: Cherries are initially fermented anaerobically for 60 hours in a closed tank. They are later submerged in water for 40 hours.

About the Farm
This farm is located south of Tolima, on the central mountain range of the Andes, with a privileged microclimate and light conditions for optimal development of coffee crop. For 5 generations, The Gutierrez family has been dedicated to the production of coffee, and they have been pioneers in the development of exotic varieties in Tolima, such as Geisha, Wush Wush, among others, using complex post-harvest processes with extended fermentation that have allowed them to obtain unique Cup characteristics in the region.
